After two years of development, Delf Neumann, the visionary, has launched the new gastro concept, which is to bring urban Italian lifestyle to Germany.

Delf Neumann, founder of the mighty Gastro & Soul Group in Hildesheim, Germany, wants to bring the traditional version of the pizza broadly into the German market with the franchise concept We are Pinsa. In addition to the new concept, pinsa is also to replace pizza in all Vapianos. Gastro & Soul founder Neumann is also responsible for this as a master franchisee and co-owner of Vapiano. In this interview, he reveals what the new core product is all about.

foodservice: Mr. Neumann, how did you come across pinsa?

Delf Neumann: I had my first pinsa two years ago and was so excited that I looked into it more intensively. We did a lot of research together and my team went on a gastronomic fact-finding trip to Italy to learn even more about pinsa. After that, it was clear to us that the pinsa is also something for the Germanmarket. That's how the idea came about that with We are Pinsa we want to introduce the pinsa in Germany and make it known. But not with imported dough, but with our own recipe just for us from our own manufactory.

Do you think the pinsa will hold its own against the popular pizza?1

Absolutely, because the pinsa only offers advantages over a traditional pizza. We are Pinsa has revised the traditional pinsa dough recipes according to modern dietary preferences and tastes . We bake the dough in our own factory in Hildesheim using only natural ingredients such as wheat, rice flour, sourdough, olive oil, salt, water and fresh yeast. The maturing time of up to 72 hours ensures a crispy and fluffy dough, which is much more digestible than conventional pizza doughs.

What is your plan with We are Pinsa?

As already mentioned, our goal with the We are Pinsa brand is to bring pinsa to Germany and make it known here. We believe that with the concept we will quickly achieve market leadership in the pinsa sector in Germany and that in the future Pinsa will always be associated with We are Pinsa. To achieve this goal, we want to grow with franchisees. By the end of this year, we plan to have 40 locations throughout Germany, of which about 30 locations alone will be shop-in-shop in our Cafe Del Sol. We are optimistic that we will reach this goal.
