International hospitality experts will be joining moderator Jonathan Doughty of ECE Marketplaces on stage at the Happetite Forum of this year’s Mapic 2022 edition. Throughout the second exhibition day (Wed. Nov. 30) major industry topics will be at the center of presentations and discussions.

Vincent Mourre, CEO and Co-Founder of Whitespace Partners, will open the conference day with his perspective on “New challenges and opportunities” in the restaurant industry. Next on stage is keynote speaker Paco Underhill. The bestselling author of  “How We Eat” and “Why We Buy” and strategic advisor of Enviroell Global will tackle major issues around food and food consumption. The title of his 30-minute speech is: “We are what we eat.”

During the 3-day exhibition, leaders from the F&B, retail, property and leisure industries have opportunity to discuss the expansion of restaurant chains in retail and urban destinations.

Starting at 11 o’clock, Manifesto Market’s Martin Barry (Founder & CEO) and Hollie Lin (Chief Growth 0ffier) will be discussing new F&B models and formats with Stéphane Keulian, F&B concept development leader at Ingka Centers. They will be addressing topics like the growing desire for local product and lower food miles and how restaurant operations will balance the needs of in-store with the growth of delivery.

This session will be followed by a deep dive into design themes: What will restaurants and food chains look like in the future? What role does design play in standing out in a crowded marketplace? And what makes a great space? These and other questions will be discussed by Lorraine Dieulot, Lifestyle Business Unit Director at Saguez & Partners; Holly Hallam, Managing Director at Designlsm, and Nicole Strock.Stanley, Co-founder and CEO of Dan Peralman Desiner Cie.

The F&B focused programme will end with another keynote: Too Good To Go Co-founder Lucie Basch will talk about how digital can help food companies respond to sustainability trends, and the advantages of reducing food waste.
